Recipe – Peanut Butter Cup Overnight Oats

Recipe for Finn van der Aar’s healthy breakfast demo, peanut butter cup overnight oats

Serves 1

  • 1/3-1/2 cup oats (gluten free if you’re coeliac)
  • 1 cup water (or plant milk if you prefer it more creamy)
  • 1 tsp cacao powder
  • 1 tbsp peanut butter
  • 1 tsp maple syrup
  • 1 small banana

You can prep this the night before so it’s really quick to put together in the morning!

Put the oats, cacao powder and water or milk in bowl and pop them in the microwave.

In a little container (e.g. an eggcup) mix the maple syrup and peanut butter so you get a nice runny sauce.

In the morning just pop on the porridge, about 1 1/2-2mins in a conventional microwave, keep an eye on it so it doesn’t spill over the edge of the bowl! Just enough time to make a cup of tea.

Finish with chopped banana and a drizzle of the maple syrup and peanut butter mix.
